Crappie Tacos

Crappie is a versatile fish that can be used in many recipes. Few fish taste better than crappie fried in cornmeal or sautéed in butter. Here’s a basic crappie taco recipe that you can adjust to your own taste. Try substituting cabbage for lettuce or experiment with your own salsa.

• 4 crappie fillets
• Seasoning
• 2 tablespoons vegetable oil
• 1 cup corn, canned or fresh (kernels)
• 1 ½ cups black beans, drained
• Flour or corn tortillas
• Shredded cheese
• Red onion, chopped
• Green chile salsa
• Chopped ripe tomato and lettuce
• Sour cream

Directions:

1. Season fish with salt and pepper or Cajun spice mix.

2. Heat oil in a large pan over medium-high heat and cook fish on both sides. Remove and drain.

3. Add corn to pan and cook for 3 to 4 minutes, if using fresh, then add beans to warm.

4. For each taco, place fish in warmed tortilla and add desired toppings. Enjoy!
